It seems the now highlighted issue on the sign in keyboard on Xbox one is linked to high contrast mode. Disabling high contrast mode should fix the issue
To disable high contrast mode carry out the following steps
- On the XBOX go to Settings
- Select Ease of Access
- Turn off the High Contrast Mode

Unless you have a particular reason why you need to use accessibility aids such as high contrast mode, then you shouldn't be using them, they can often be more trouble than they are worth. If you want to make your Xbox interface easier to see you're better off using the standard personalisation settings
