Accessing the 5Ghz settings of the HUB Two home broadband wi-fi box, only channels 36 and 44 are selectable.
Is there any way I can get channels 52, 56 or higher, to see if their 5Ghz signal is stronger.

I don't believe it's possible on the NOW Hub 2.
Here's a discussion about it on the Sky Forum, where the Sky Q Hub Router is a clone of the NOW Router.

er...apart from replacing the router modem with a non-proprietary box.

Thank you for your prompt comment. I feared this was the case. But the link does explain Sky's thinking even if it doesn't help me. And I wonder, if several Sky / NowTV subscribers live in close proximity, won't Sky's stance exacerbate any frequency overcrowding.
