Is it possible to change my activation go live date? My contract with Sky ends on 7th April and my go-live date is 27th March 2023.

Simple answer is no. Did you let NOW handle the cancellation and move of your broadband?
As they would be able to make sure you keep connected without interruption.
Also NOW are fully reliant on OpenReach. So it’s whatever they are able to schedule in to get you up and running, this includes switching providers.

It shold take about 14 days what will probably happen is that Sky will bill you for the period 27th March to the 7th of April ( 12 days) they may also bill you a full month - ie for the whole of april then issue a refund for the period when your service was taken over by Now to the end of that months billing cycle / minimum term

Assuming you are in the last month of your contract with Sky, they may well refund you for the unused period.
If not, It's better than having a period of no broadband at all.
It's not Now/Sky who decide exactly when the swap takes place, it's Openreach.
