How will I know when my broadband goes live

How will I know it’s live when I’ve been emailed and told not to set up the hub until it’s it goes live?

You set it up on the day. The process just tells you not to set up before the date. 

FYI that I do not work for NOW, just a NOW customer trying to help

It’s live when the middle light on the Now router goes on and stays on.

Set a Payment PIN on your account so that no-one but you can buy memberships on it.
Check your bank accounts monthly for any other unexpected payments to Now.
That way you can at least nip them in the bud, while you and Now figure out whose fault they are.
