This might be because of how the studio licence rights to Sky.
There are 2 types of rights, Catch-Up and VOD.
When a TV series airs, the episode will get either a 7 Day Catch Up right or a Series stacking right with the final episode having 7 days.
After that 7 day period, the season will drop off the platform.
Then, after the studios set period, that series moves from Catch-Up to VOD, known as Boxsets etc, this normally becomes a 90 Day right or sometimes 12 months etc, depends on the licence deal the studio offer and what Sky and the like are willing to pay. I would hazard a guess that S3 will be back in full around 30 days after the last episode dropped off the platform and classified in Boxsets.

The reason studios do this, is so they can air the TV show, then allow a small period of Transactional sales through people like iTunes or Amazon, selling the DVD, Blu-Ray or Digital files for ownership before moving the content to be subsciber inclusive.

Hope that helps, I dont know if thats 100% the reason for drop off, but normally its because of this.
