Sky only pick up the rights for a show/film for an extended period of time. However as like Criminal Minds, Greys Anatomy are owned by ABC studios, to which last year Disney (owner of ABC studios) pulled the boxsets of ABC from Sky.
If you have Amazon prime you can watch seasons 1-14 there, but I hate to say that I don't see the boxsets returning to Sky/Now TV anytime soon.
In USA Disney owned Hulu have all seasons of Grey's Anatomy, to which Hulu have stated that it will be launching internationally in 2021 after Dinsey+ is launched worldwide.
