Welcome to the forum. Don't worry GoT boxsets will return again at some point, although there won't be a confirmed date yet, it will probably be a few months.
Alternately you can keep an eye on Sky Atlantic listings. They're currently repeating GoT starting with S1 a few episodes at a time on Friday nights which you can watch on the live stream (they won't be added to catch-up afterwards though).
Hopefully there's plenty of other shows that interest you, if you haven't already you might want to give Britannia a go.
